Hearty BBQ Meatloaf (Gluten/Dairy Free!)

Years ago I was on the hunt for a meatloaf recipe that wasn’t “traditional”. Every meatloaf I had ever tried growing up just tasted like, well, a loaf of meat. Very little flavor, very little texture. I did find a recipe that worked and over the years, I’ve altered it to pretty much, what I feel, is perfection at this point.

Its hearty, simple, packed full of flavor and even a tad bit on the healthy side. Bonus: You can cook it in the oven OR the crock pot! Yay for yummy crock pot meals!!

The only downside to this meatloaf is that its a little crumbly. Sometimes it ends up as a heap on the plate instead of a sweet little slice of meat, but I kind of like it that way. It feels less like cafeteria food. 😉

Hearty BBQ Meatloaf
Makes 4 servings

Ingredients:

  • 1c of Crushed BBQ chips (Different brands/types/flavors will give a different result!)
  • 1/2c Ground Flaxseed (Read here for info on why Flaxseed is good for you)
  • 1tsp Salt
  • 1/2tsp Black Pepper
  • 1/2tsp Garlic Powder
  • 1/2tsp Onion Powder (Or you can use a tbsp of diced onions)
  • 1/2tsp Liquid Smoke
  • 1/3c BBQ sauce (Again, different sauces will alter the flavor of the loaf!)
  • 1 Egg
  • 1lb Ground Beef

A note about the ground beef: I always use the lowest fat ground beef possible for meatloaf, because otherwise when the fat cooks out, it turns into grease around the loaf. 93/7 or 90/10 are your best bet.

Turn crock pot on low (or preheat oven to 375degrees) In a large bowl, mix the first 7 ingredients. Add in the BBQ sauce, then egg, then ground beef, mixing well after each addition. You will probably have the mix the meat in by hand – thats the fun of meatloaf! Mold into a loaf shape and lay into the crock pot, cook on low for 4-6 hours or until done.

To cook in the oven, mold into loaf shape and lay on a greased cookie sheet OR press into greased loaf pan OR you can press into a greased muffin pan. Cook for 45-60 minutes (30 minutes for muffins)

Top with ketchup if you’d like or eat it plain! This is one of my husbands favorite leftovers to nibble on, straight out of the container in the fridge!
